Try Becky's fresh vegetable salad when you're looking for a light summer side dish. Broccoli, cauliflower, mushrooms, and green onions are marinated in a savory dressing. They soak up its flavor and become tender, yet stay crisp. The marinade is sweet and tangy with a peppery bite from celery seed. It would be good on a lettuce salad too.

  • 1 bunch
    broccoli
  • 1 bunch
    cauliflower
  • 2 bunch
    green onions, sliced
  • 1 lb
    sliced mushrooms
  • MARINADE
  • 3/4 c
    granulated sugar
  • 1 1/2 tsp
    salt
  • 2 tsp
    paprika
  • 2 tsp
    celery seed
  • 4 Tbsp
    minced onion
  • 1 c
    oil, your choice
  • 1/2 c
    vinegar, your choice

  • Cut broccoli and cauliflower into bite-sized pieces.

  • Combine marinade ingredients in a bowl.
