This is a salad that my Mom made growing up. I had the chance to learn how to make it befor she passed away. She said she got it off a Rice-A-Roni box 30 years ago. Now I make it all the time for my family.

Ingredients For artichoke rice salad

  • 1 box
    family size box of chicken rice-a-roni
  • 1 c
    mayonnaise dressing
  • 1 c
    green onions
  • 1 jar
    marinated artichoke hearts

How To Make artichoke rice salad

  • 1
    Follow directions on box to make the Rice-A-Roni. Let cool in fridge for one hour.

    Cut up artichoke hearts in larg chunks and green onions and add to rice
  • 3
    Add one cup of mayo to the juice left in the jar from the artichoke hearts and shake. Add the mayo mix to the rice and stir.

    Let the salad cool for one more hour in fridge befor surving and enjoy
