12 ozmarinated artichoke hearts, drained, chopped - reserve 4 ounces

1 cmushrooms, sliced

1/2 cred bell pepper, seeded and chopped

1/4 cparmesan cheese, grated

1/3 tspwhite pepper

1.5 Tbspwhite wine vinegar

lettuce leaves

1/2 cgreen onions, chopped
How To Make artichoke rice salad

1Combine hot rice, artichoke hearts, mushrooms, onions, cheese and pepper.

2Combine reserved liquid from artichokes and vinegar; shake to combine.

3Drizzle over salad.

4Spoon into individual lettuce-lined salad plates.
