This is a wonderful and delicious egg salad recipe that comes from one of my Amish cookbooks.

Ingredients For amish egg & olive salad

6hard-cooked eggs, cooled and peeled

1/4 tspsalt
-
1 dashblack pepper
-
1/4 cmayonnaise (i was out of mayo, so i used miracle whip; either is fine)

1 to 2 Tbspchopped green olives with pimentos

1 to 2 tspprepared mustard (i used dijon mustard; my favorite kind!)
How To Make amish egg & olive salad

1Chop eggs into small chunks.

2Fold in remaining ingredients and chill.

3Serve on bread or rolls with lettuce leaves (or can be served as a side dish).
