ali's kale-blueberry salad
Eating this salad makes me feel so healthy! Also, it is colorful and pretty. P.S. - I had a hard time finding the right dressing for this salad, and tried several - I found Marie's Pomegranate Blueberry Vinaigrette dressing (in the produce section) to be perfect!

Ingredients For ali's kale-blueberry salad

4 cfresh kale, chopped

1 smcarrot, shredded*

1 ozcabbage, shredded*

1/4 cred onion, diced

1/4 cdried cranberries

1/4 csunflower seeds

1/4 cslivered or sliced almonds

1/3 cblueberries, fresh

marie's pomegranate blueberry vinaigrette dressing!

* instead of shredded carrot/cabbage, use 1/2 cup already made broccoli slaw
How To Make ali's kale-blueberry salad

1Rinse and drain kale, chop into small pieces, put into large salad bowl. Shred carrot and cabbage, if using (or use store-bought broccoli slaw, already shredded), add to bowl. Dice red onion, add to bowl.

2Add sunflower seeds, almonds, cranberries and blueberries. Toss to mix well.

3Add dressing and serve.
