st. patrick's salad

I was given this recipe at least 45 years ago and it has been a favorite with our family since then. Using sugar free, and lite or low fat ingredients makes this a healthy choice. This is also a great summer salad when served on a bed of lettuce.

Ingredients For st. patrick's salad

  • 1 small box
    lime gelatin
  • 1 small box
    lemon gelatin
  • 2 c
    boiling water
  • 1 c
    pineapple juice
  • 2-3
    drops green food coloring
  • 1 c
    crushed pineapple drained
  • 1 c
    evaporated milk
  • 1 c
    mayonnaise
  • 1 lb
    cottage cheese
  • 1/2 c
    chopped walnuts (optional)

How To Make st. patrick's salad

  • 1
    Disolve gelatin in boiling water. Add juice and green food coloring (if desired). Chill until mixture begins to thicken.

    Fold in remaining ingredients and chill overnight until fully set.
