My Mom brought this recipe back with her from a trip to Wyoming in about 1950. It became a favorite of mine and I make it for all holidays and special occasions.

Ingredients For pineapple cheese salad

  • 2/3 c
    sugar
  • 1/2 c
    pineapple juice
  • 1 pkg
    knox gelatin
  • 1/4 c
    cold water
  • 1 c
    grated velvetta cheese
  • 1 3oz pkg
    cream cheese
  • 1 c
    crushed pineapple, drained
  • 1 c
    whipping cream that has been whipped

How To Make pineapple cheese salad

    In medium saucepan dissolve sugar in pineapple juice over low heat. Add envelope of Knox gelatin: that has been dissolved in cold water. Continue to stir and heat until sugar and gelatin has dissolved. Chill until partly set. Add grated velvetta and pineapple. Mix throughly. Whip until creamy the cream cheese and add to above mixture. Fold in whipping cream that has been whipped. Pour into mold and chill.

    I have different molds that I use for special occasions. This is wonderful if you want to have a few friends over and serve with banana bread, sliced and buttered.
