Ingredients For zucchini and parmesan salad

  • 2 lb
    green zucchini (1 inch around)
  • 1 lb
    fresh arugula or boston lettuce
  • 3-4 Tbsp
    extra-virgin olive oil
  • 2 Tbsp
    lemon juice, fresh( to taste)
  • salt and pepper to taste
  • 1/4 lb
    parmesan cheese(single piece)

How To Make zucchini and parmesan salad

  • 1
    SLICE AND CHOP ZUCCHINI INTO PIECES AND SET ASIDE. WASH AND DRY LETTUCE.

    IN A SALAD BOWL, WHISK OLIVE OIL,LEMON JUICE. AND SALT AND PEPPER TOGETHER. ADD ZUCCHINI AND TOSS UNTIL COATED.

    CUT LONG PAPER- THIN SLICES OF CHEESE, PLACE THEM ON THE ZUCCHINI MIXTURE. DIVIDE THE LETTUCE ONTO 4 PLATES. SPOON MIXTURE ON TOP OF LETTUCE. GARNISH WITH EXTRA PARMESAN AND SERVE IMMEDIATELY.
