Ingredients For zucchini and parmesan salad

2 lbgreen zucchini (1 inch around)

1 lbfresh arugula or boston lettuce

3-4 Tbspextra-virgin olive oil
-
2 Tbsplemon juice, fresh( to taste)

salt and pepper to taste

1/4 lbparmesan cheese(single piece)
How To Make zucchini and parmesan salad

1SLICE AND CHOP ZUCCHINI INTO PIECES AND SET ASIDE. WASH AND DRY LETTUCE.

2IN A SALAD BOWL, WHISK OLIVE OIL,LEMON JUICE. AND SALT AND PEPPER TOGETHER. ADD ZUCCHINI AND TOSS UNTIL COATED.

3CUT LONG PAPER- THIN SLICES OF CHEESE, PLACE THEM ON THE ZUCCHINI MIXTURE. DIVIDE THE LETTUCE ONTO 4 PLATES. SPOON MIXTURE ON TOP OF LETTUCE. GARNISH WITH EXTRA PARMESAN AND SERVE IMMEDIATELY.
