2/3 cfresh cilantro chopped

1/4 cplain yogurt

1/4 cred wine vinegar

1/4 cparmesan cheese, freshly grated

1/4 cshallots, chopped

2anchovy fillets

2cloves garlic

1jalapeno pepper, seeded and chopped

1 Tbspfresh lemon juice

3/4 colive oil (or less to taste)

8 cromain lettuce (2 heads), chopped

3 csalad croutons

1 lgred bell pepper, diced

2ears sweet white or yellow corn, kernels removed

1 coil-packed sun-dried tomatoes, drained and patted dry - thinly sliced

additional freshly grated parmesan cheese
How To Make texas caesar salad

1Puree first 9 ingredients in processor until smooth. Gradually add olive oil and process until blended. Season dressing to taste with salt and pepper.

2Combine romaine lettuce and next 4 ingredients in a large bowl. Toss with enough dressing to coat. Garnish with additional grated parmesan cheese.
