Ingredients For strawberry chicken salad

  • 7 Tbsp
    olive oil, divided
  • 2 Tbsp
    balsamic vinegar, divided
  • 1 Tbsp
    sugar
  • 4
    chicken breasts
  • 10 c
    romaine lettuce
  • 12
    strawberries quartered
  • 4 Tbsp
    pistachio nuts
  • 2
    avocado, halved and sliced
  • 1/2 c
    shredded Parmesan cheese
  • 2 Tbsp
    candied ginger

How To Make strawberry chicken salad

  • 1
    Combine 6 tbsp olive oil, balsamic vinegar and sugar together. Use half to marinate the chicken saving the other half for dressing. Let the chicken marinate for 30 minutes. Cut the chicken into strips.

    Add the remaining olive oil to a skillet and cook the chicken until no longer pink, about 5 minutes. Remove from heat and let cool a bit.

    To assemble the salad, add the romaine lettuce to the plate. Top with strawberries, pistachios, avocado slices, Parmesan cheese, and candied ginger. Add the chicken slices. Drizzle the remaining balsamic over the top.
