My family has been serving this on holidays for years. To make ahead, prepare the salad and dressing, but do not combine. Cover the salad with plastic food wrap and refrigerate. Before serving heat the dressing, and then toss it with the salad.

Spinach bacon salad with warm dressing is a classic salad that's always delicious. Slightly sweet and tangy, the dressing is a warm vinaigrette. Pouring it warm on the salad slightly wilts the fresh spinach. Diced red onion and sliced mushrooms soak up some of the dressing. This needs to be served immediately and will be great with dinner or lunch.

Ingredients For spinach bacon salad with warm dressing

  • 1 pkg
    spinach, 10 ounces
  • 1/4 lb
    mushrooms, thinly sliced
  • 1 sm
    red onion
  • 8 slice
    bacon, cut into 1 inch pieces
  • 2 Tbsp
    Dijon mustard
  • 2 tsp
    granulated sugar
  • 2 tsp
    red wine vinegar
  • 1 tsp
    Worcestershire sauce
  • 3 Tbsp
    lemon juice

How To Make spinach bacon salad with warm dressing

  • Prepare the spinach.

    Trim the spinach of coarse stems and blemished leaves and wash. Pat the spinach dry with paper toweling. Tear into bite-size pieces and put into a large serving bowl.
  • Top with sliced mushrooms and red onion.

  • Cook bacon until crisp.

    Meanwhile, cook the bacon in a 12 inch skillet over moderately high heat until crisp -- about 5 minutes. Drain on paper toweling and reserve.
  • Leave some of the bacon grease and add mustard, sugar, vinegar, Worcestershire sauce, and lemon juice.

    Pour off all but 5 Tbsp of the drippings and reduce heat to low. Add the mustard, sugar, vinegar, Worcestershire sauce, and lemon juice to the drippings.
  • Heat until ingredients are combined.

    Stir to mix. Heat until all of the ingredients are thoroughly combined.
  • Sprinkle the bacon and pour dressing over the spinach.

    Pour the dressing over the salad, crumble the bacon over, and toss. Serve immediately.
