I don't like really spicy hot foods, but this is good you can omit the chilies and add peppers instead if desired.

Ingredients For spicy tomato cucumber salad

  • 1 c
    ucumbers (2 medium), peeled and sliced
  • 2 md
    tomatoes (early girls are great), sliced and drained slightly
  • 1 lg
    sweet red onion, thinly sliced
  • 3
    anaheim chiles, seeded and thinly sliced (galapagos if you prefer)
  • 1/4 c
    fresh parsley, finely chopped
  • 1/4 c
    celery, sliced 1/8 inch thick
  • 1/4 c
    whole grain prepared mustard
  • 2 tsp
    sugar, salt to taste

How To Make spicy tomato cucumber salad

  • 1
    Combine the cucumbers, tomatoes, onions, green chilies, parsley and celery n a bowl. Combine mustard and sugar and added to sliced vegetables. Salt to taste. Let sit for 20 minutes at room temperature.
