I really love the combination of fresh ingredients in this salad. It's great for a hot summer day when chilled foods are so appealing. It's quite delicious as written, but I like to top the salad with diced fresh avocado, but another option is to sprinkle crushed tortilla chips on top. It's filling enough that we usually enjoy this as a main dish. But obviously, it'll serve a larger crowd if you serve it as a side salad.

Ingredients For southwest salad

  • 1/2 c
    reduced-fat sour cream
  • 3 Tbsp
    salsa
  • 1 Tbsp
    lime juice
  • 3/4 tsp
    ground cumin
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    onion powder
  • 1/4 tsp
    salt
  • 1/4 tsp
    black pepper
  • 6 c
    romaine lettuce, torn or chopped into bite-size pieces
  • 2 c
    cherry tomatoes, halved (I sometimes use grape tomatoes)
  • 2 c
    cooked chicken breast, shredded or chopped
  • 1 c
    corn kernels
  • 1 c
    canned black beans, rinsed and drained
  • 1/3 c
    red onion, finely chopped
  • 1/2 c
    chili-lime tortilla strips (I use half of a 3.5-oz bag "Fresh Gourmet" brand southwest flavored tortilla salad toppers)
  • 1/4 c
    shredded colby jack cheese
  • 1 md
    fresh avocado, peeled and diced, optional, for garnish
  • 1 fresh md
    lime, cut into 4 wedges, for serving, optional

How To Make southwest salad

    In a large salad bowl, whisk together the sour cream, salsa, lime juice, cumin, garlic powder, onion powder, salt and pepper. (The dressing can be made in advance, transferred to an air-tight container, and kept in the refrigerator for up to 3 days.)

    Add the lettuce, tomatoes, chicken, corn, black beans, onion and tortilla strips. Toss until well distributed. If not serving immediately, cover bowl and keep in refrigerator until serving time.

    Divide the salad among 4 individual salad plates. Sprinkle cheese and diced avocado on top. Add a lime wedge to each portion, and serve chilled.
