A simple salad that includes good fats from the avocado, protein from the shrimp and egg and a nice, sweet crunch from the bell pepper. It's a snap to throw together for a dinnertime salad or make it the night before and take it to work for lunch the next day. Add your favorite dressing and you've got an easy, healthful dish.

  • 1 and 1/2 c
    chopped lettuce
  • 1/2
    avocado, diced
  • 1/4 c
    diced red bell pepper
  • 1
    hard boiled egg, sliced
  • 5-6
    large shrimp, cooked

How To Make shrimp & egg mixed salad

    Chop lettuce, or greens of your choice, and place into a large salad bowl.

    Add remaining ingredients to the bed of lettuce/greens.

    Drizzle on salad dressing of your choice and enjoy!
