roasted red pepper vinaigrette

I made this up off the top of my head and the quantities are rough guesstimates as close as I remember. I made this to put on grilled romaine hearts but use on whatever you choose.

Ingredients For roasted red pepper vinaigrette

  • 12 oz
    jar drained or 2 large fresh roasted red bell pepper
  • 2/3 c
    olive oil
  • 1/3 c
    seasoned rice vinegar
  • 1 Tbsp
    granulated onion
  • 1 tsp
    granulated garlic
  • 1 tsp
    minced ginger ( dorot gardens makes a frozen minced ginger 1 cube)
  • 1 tsp
    basil dry
  • 1 tsp
    celery seed
  • 1/2 tsp
    black pepper. fresh ground
  • 1/2 tsp
    salt

How To Make roasted red pepper vinaigrette

    Add Red pepper to food processor and pulse until puréed about 5 or 6 pulses
  • 2
    Add all ingredients except olive oil and pulse a few time to mix
  • 3
    Turn processor on and slowly pour olive oil to emulsify.

    Taste and adjust salt to your taste
