I love Qdoba's salad and have made them at home using purchased guacamole, pico de gallo and corn and bean salsa. I sometimes use less chips and cheese to lighten the calories.

Ingredients For qdoba salad

  • 1/4 c
    sliced green peppers
  • 2 Tbsp
    diced onions
  • 1 tsp
    olive oil
  • 2 c
    chopped romaine lettuce
  • 1/4 c
    black beans
  • 1 Tbsp
    pico de gallo or favorite salsa
  • 1 Tbsp
    corn and black bean salsa
  • 1 Tbsp
    shredded cheese, optional
  • 2 Tbsp
    cilantro
  • 1 1/2 oz
    guacamole
  • 1/2 oz
    tortilla chips, crumbled
  • 1 tsp
    lime juice, to serve

How To Make qdoba salad

  • 1
    Saute peppers and onions in oil until softened.

    In a large salad bowl, add lettuce, veggies, beans, and salsas. Add shredded cheese, if using.
  • 3
    Top with cilantro, guacamole and crushed chips.
  • 4
    Add a splash of lime juice to serve.
