I love Qdoba's salad and have made them at home using purchased guacamole, pico de gallo and corn and bean salsa. I sometimes use less chips and cheese to lighten the calories.

Ingredients For qdoba salad

1/4 csliced green peppers

2 Tbspdiced onions

1 tspolive oil

2 cchopped romaine lettuce

1/4 cblack beans

1 Tbsppico de gallo or favorite salsa

1 Tbspcorn and black bean salsa

1 Tbspshredded cheese, optional

2 Tbspcilantro

1 1/2 ozguacamole

1/2 oztortilla chips, crumbled

1 tsplime juice, to serve
How To Make qdoba salad

1Saute peppers and onions in oil until softened.

2In a large salad bowl, add lettuce, veggies, beans, and salsas. Add shredded cheese, if using.

3Top with cilantro, guacamole and crushed chips.

4Add a splash of lime juice to serve.
