~ my western salad ~ yum!
I've enjoyed this simple, yet fast salad since I can remember. My aunt would always make one similar and often. She never added the bacon, that's my addition. I could make a meal out of this salad. I hope you try it sometime.

Ingredients For ~ my western salad ~ yum!

1/2head, iceburg lettuce, torn into bite sized pieces

4 ozfresh spinach leaves, tear if large

2hard boiled eggs

1 large clovecut garlic

1/4 tspheaping, dry mustard

3/4 tspkosher salt

1/2 tspblack pepper
-
1/4 crice vinegar or regular

1/2 cvegetable oil
-
1 mdsweet onion, sliced thinly

1/4 - 1/2 ccrumbled, i used real bacon bits tonight
How To Make ~ my western salad ~ yum!

1In a large pretty glass bowl, that you will be serving the salad in, rub sides of bowl well, with cut garlic. Cut eggs in half and remove yolks, chop the whites. In the bowl, whisk together, yolks, mustard, salt, pepper, vinegar and oil. Mash any yolk that's not dissolved.

2To the dressing, add the onion, spinach, lettuce, bacon and chopped whites. Toss well to coat with dressing.

3Serve immediately. I can make a meal out of this salad.
