Ingredients For mixed salad with avocado dressing

    large head of romaine lettuce torn into bite size pieces
  • 1 1/2
    avocados, cut into thick slices
  • 2
    large firm ripe tomatoes, cut into wedges
  • 3
    green (spring) onions, sliced
  • DRESSING
  • 2 Tbsp
    mayonnaise
  • 6 clove
    garlic
  • 1/4 c
    chopped onions
  • 1 Tbsp
    lime juice
  • 1/2 tsp
    dried thyme
  • 1/2 tsp
    salt
  • 1/4 tsp
    fresh ground pepper
  • 1
    bay leaf
  • 1/2
    avocado
  • 1/2 c
    water
  • 1 c
    corn oil

How To Make mixed salad with avocado dressing

    To make the dressing, puree the mayonnise, garlic, onion, lime juice, thyme, salt, pepper, bay leaf, avocado and water in a blender. With the motor running, add the oil in a thin stream until the fixture forms and emulsion, about 2 minutes. I put the dressing in a clean mason jar cap it and chill till ready to use...........at least an hour to let the flavors come out.

    Arrange lettuce on a pretty festive platter. Top with the avocados and tomatoes. Drizzle with the dressing, garnish with the green onions and serve immediately. Keep leftover dressing in the mason jar and keep in fridge
