This is a very tasty salad. I just love the avocado dressing its made with. The original recipe doesn't call for meat but I have added taco meat or shredded chicken meat and it was delicious ! You can have it with / with out meat and it still delicious !

Ingredients For mexican salad with avocado dressing
- FOR THE AVOCADO DRESSING.

1 lgavocado

1 1/2 Tbsplemon juice, fresh

1/4 colive oil, extra virgin

3/4 tspsea salt

2 clovegarlic
-
1/2 cmayonnaise
-
1 tsphot sauce
- FOR THE SALAD
-
2 mdheads romaine lettuce ; chopped
-
3 lgtomatoes ; chopped
-
2 ccorn chips ; roughly crushed
-
3/4-1 ccheddar cheese, shredded
-
15 ozcanned pinto beans ; drained & rinsed
-
5green onions ; chopped
-
1 canblack olives (2.25 oz)
- FOR TACO MEAT ; OPTIONAL

1/2-1 lbhamburger
-
1 pkgtaco seasoning mix

1/2 cwater
How To Make mexican salad with avocado dressing

1For the sauce ; combine ALL the ingredients in a food processor or blender , process until smooth and creamy. Taste and adjust seasonings. Cover and refrigerate.

2In a large skillet brown hamburger , cook until hamburger is no longer pink , add taco seasoning and mix well, add about 1/2 cup water and let simmer.

3For the salad Combine all the ingredients in a large serving bowl.

4When ready to eat Toss the salad well with the hamburger (optional) and the chilled sauce ; serve immediately. Enjoy !
