2 Tbspolive oil, extra virgin

1 tspfresh, chopped oregano

1lemon

1 Tbsphoney

salt & pepper to taste

1 clemonade
-
4 lgpeaches
-
2 Tbspolive oil, extra virgin

2 cspring mix greens
-
1 lgavocado, diced
-
1/4 cgreen olives, pitted and halved
-
1/4 cblack olives, pitted and halved

1 mdcucumber, thinly sliced

1 cfeta cheese crumbles
How To Make mediterranean grilled peach and feta salad

1Juice and zest the lemon.

2Combine the lemon juice and zest with the remaining dressing ingredients in a cruet or jar. Mix well and set aside.

3Slice each peach into 8 wedges and remove the pit.

4In a bowl, combine peach wedges and lemonade. Gently toss then drain.Place peaches in a baking pan.

5Add olive oil and toss to coat. Set aside

6In a salad bowl, layer the greens, avocado, olives, cucumber and feta.

7Drizzle the dressing over the salad. Cover with plastic wrap and chill while grilling the peaches.

8Heat your grill to about 375 degrees.

9Spray a grilling mesh with nonstick cooking spray.

10Place peach slices on the mesh and grill for 3 minutes on each side.

11Top the salad with the grilled peaches and toss gently.

12Serve immediately or refrigerate, covered until ready to serve.
