I just love salads and this one is a complete meal-in-one. I usually add any fresh veggie that I have in the refrigerator.

Ingredients For meal-in-a-salad

  • 1
    head lettuce or large bag of your favorite salad greens
  • 1 sm
    bag baby spinach leaves
  • 1 1/2 c
    ham, cubed or strips
  • 1 sm
    red onion, halved the sliced
  • 1 -2
    ribs celery, chopped
  • 1
    red bell pepper, cut into strips
  • 1 c
    shredded carrot
  • 6-8
    radishes, thinly sliced
  • 1 pt
    cherry tomatoes
  • 6
    hard boiled eggs, cut into large pieces
  • 2 c
    cubed mozzarella or cheddar cheese
  • 1
    cucumber, washed and thinly sliced
  • EASY SALAD DRESSING
  • 1 c
    miracle whip
  • 2 tsp
    honey mustard
  • 1 tsp
    celery seeds
  • 1/2 tsp
    ground black pepper

How To Make meal-in-a-salad

    In a large salad bowl, tear the lettuce into bite-size pieces.

    Add the rest of the prepared items except the cucumbers and eggs.

    At this point you can cover this bowl and let chill in the refrigerator.

    Just before serving, add the cucumbers and eggs. Gently toss.

    In a small bowl, mix the dressing ingredients well. Taste to see if any adjustments need to be made. If you prefer, you can use your favorite salad dressing instead.

    Pour dressing over the salad and toss to combine. Place in a chilled serving dish and serve.
