I just love salads and this one is a complete meal-in-one. I usually add any fresh veggie that I have in the refrigerator.

Ingredients For meal-in-a-salad

1head lettuce or large bag of your favorite salad greens

1 smbag baby spinach leaves

1 1/2 cham, cubed or strips

1 smred onion, halved the sliced

1 -2ribs celery, chopped
-
1red bell pepper, cut into strips
-
1 cshredded carrot
-
6-8radishes, thinly sliced
-
1 ptcherry tomatoes
-
6hard boiled eggs, cut into large pieces

2 ccubed mozzarella or cheddar cheese
-
1cucumber, washed and thinly sliced
- EASY SALAD DRESSING

1 cmiracle whip
-
2 tsphoney mustard
-
1 tspcelery seeds
-
1/2 tspground black pepper
How To Make meal-in-a-salad

1In a large salad bowl, tear the lettuce into bite-size pieces.

2Add the rest of the prepared items except the cucumbers and eggs.

3At this point you can cover this bowl and let chill in the refrigerator.

4Just before serving, add the cucumbers and eggs. Gently toss.

5In a small bowl, mix the dressing ingredients well. Taste to see if any adjustments need to be made. If you prefer, you can use your favorite salad dressing instead.

6Pour dressing over the salad and toss to combine. Place in a chilled serving dish and serve.
