Here's a low-fat version of a Caesar Salad and the dressing does not contain egg. Enjoy with your favorite entree.

Ingredients For low fat-no egg caesar salad & dressing

  • 2 oz
    italian bread, cut in 1/2 inch cubes
  • 3 Tbsp
    reduced fat mayonnaise
  • 2 Tbsp
    fresh squeezed lemon juice
  • 2 Tbsp
    reduced sodium chicken broth
  • 1 tsp
    anchovy paste
  • 1/2 tsp
    freshly ground black pepper
  • 8 c
    torn romaine lettuce
  • 1 can
    15 oz. can red kidney beans, rinsed and drained
  • 1/4 c
    parmesan cheese, grated

How To Make low fat-no egg caesar salad & dressing

    In the oven, under broil, toast the bread cubes for approx. 1 minute or until golden.

    In a large bowl, make the dressing by combining the mayonnaise, lemon juice, broth, anchovy paste and 1/4 tsp. pepper - whisk until emulsified.

    Add the lettuce, beans, bread and parmesan -- toss to coat the salad thoroughly with the dressing. Sprinkle with remaining 1/4 tsp. pepper and serve.
