Ingredients For low fat-no egg caesar salad & dressing

2 ozitalian bread, cut in 1/2 inch cubes

3 Tbspreduced fat mayonnaise

2 Tbspfresh squeezed lemon juice

2 Tbspreduced sodium chicken broth

1 tspanchovy paste
-
1/2 tspfreshly ground black pepper

8 ctorn romaine lettuce
-
1 can15 oz. can red kidney beans, rinsed and drained

1/4 cparmesan cheese, grated
How To Make low fat-no egg caesar salad & dressing

1In the oven, under broil, toast the bread cubes for approx. 1 minute or until golden.

2In a large bowl, make the dressing by combining the mayonnaise, lemon juice, broth, anchovy paste and 1/4 tsp. pepper - whisk until emulsified.

3Add the lettuce, beans, bread and parmesan -- toss to coat the salad thoroughly with the dressing. Sprinkle with remaining 1/4 tsp. pepper and serve.
