Ingredients For jicama pepita garbanzo salad

4-6 clettuce, wahed and torn

1 cjicama, peeled and julienned

1/2 croasted pumpkin seeds (pepitas)

1/2 cgarbanzo beans (chickpeas)

1/4 cred wine vinegar

1shallot peeled and minced

1 tspdijon mustard

1 tspfresh thyme chopped

salt to taste

pepper to taste

pinchsugar

1/2 cextra virgin olive oil
How To Make jicama pepita garbanzo salad

1Put the lettuce, jicama, pepitas and garbanzo beans in a large bowl.

2In a small bowl combine the vinegar, shallot, thyme, salt, pepper, sugar, mustard. Whisk the olive oil into the mustard mixture.

3Pour the dressing over the salad ingredients and toss to coat.
