I like to order chicken tenders at a restaurant, but often get more than I can eat, so I take home the leftovers. This is an easy and quick way to use them up. You can easily make your own honey-mustard dressing or use store-bought. I used a mixture of iceberg lettuce and spinach, romaine is nice, too. Your choice! Another choice: briefly heat the tenders before slicing if you don't like them cold from the fridge.

Ingredients For honey mustard chicken tenders salad

  • 4-6
    chicken tenders, left-over
  • 3 c
    mixed greens
  • 1/2
    avocado, sliced
  • 1/2 c
    red pepper, cut into strips
  • 1/2 c
    cherry or grape tomatoes, halved
  • 1/2
    shallot, cut into rings or sliced green onion
  • 1 or 2
    mushrooms, sliced (optional)
  • honey-mustard dressing, commercial or homemade

How To Make honey mustard chicken tenders salad

    Place the lettuce, avocado, pepper strips, tomatoes, shallot or green onion and mushrooms in a large bowl.

    Pour the dressing of choice over the salad and toss to evenly distribute.

    Divide the dressed salad between 2 plates.
  • 4
    Slice the chicken tenders and divide between salads. Serve immediately.
