honey mustard chicken tenders salad
I like to order chicken tenders at a restaurant, but often get more than I can eat, so I take home the leftovers. This is an easy and quick way to use them up. You can easily make your own honey-mustard dressing or use store-bought. I used a mixture of iceberg lettuce and spinach, romaine is nice, too. Your choice! Another choice: briefly heat the tenders before slicing if you don't like them cold from the fridge.

Ingredients
- 4-6 chicken tenders, left-over
- 3 cups mixed greens
- 1/2 avocado, sliced
- 1/2 cup red pepper, cut into strips
- 1/2 cup cherry or grape tomatoes, halved
- 1/2 shallot, cut into rings or sliced green onion
- 1 or 2 mushrooms, sliced (optional)
- honey-mustard dressing, commercial or homemade
How To Make honey mustard chicken tenders salad

Step 1Place the lettuce, avocado, pepper strips, tomatoes, shallot or green onion and mushrooms in a large bowl.

Step 2Pour the dressing of choice over the salad and toss to evenly distribute.

Step 3Divide the dressed salad between 2 plates.

Step 4Slice the chicken tenders and divide between salads. Serve immediately.
