heart healthy chopped salad

I'm on a new diet to get slim and healthy after having a procedure on my heart called cardiac ablation. The diet is basically almost wholly vegetarian and foods that are packed with nutrition. The salad makings are chopped to make it easier to eat and digest and the salad dressing I made up using the base of cashew butter from another recipe I saw in a book. People really like this salad.

Ingredients For heart healthy chopped salad

  • 1 1/2 c
    cabbage, green or red, shredded
  • 4 c
    romaine lettuce or other type, chopped
  • 1 lg
    tomato, diced
  • 1/4 c
    red onion, chopped
  • 1/3 c
    yellow, red or green bell pepper, chopped
  • 1/3 c
    cucumber, chopped
  • 1/2 c
    cauliflower or broccoli, chopped
  • 1/2 c
    mushrooms, chopped
  • 2 Tbsp
    raisins, chopped dates, apricots or dried cranberries
  • 2 Tbsp
    mixed nuts or walnuts, chopped
  • 3 Tbsp
    parsley, chopped
  • 1 1/2 Tbsp
    raw cashew butter
  • 2 1/2 Tbsp
    balsamic or rice vinegar or lemon juice
  • 1 clove
    garlic, chopped fine
  • 1/2 tsp
    mustard
  • 1/8 c
    almond milk

How To Make heart healthy chopped salad

  • 1
    Shred, chop or dice all fresh ingredients and place in a big salad bowl with nuts and dried fruit.

    Mix the cashew butter, vinegar or lemon juice, garlic, mustard and almond milk in a small bowl. Add more almond milk if necessary to stir to creamy consistency and pour over salad. Toss.

    This is a big salad for two or more depending on how much you want to eat and what else you're having. It's good leftover too.
