This is my husband's neice's recipe. It's delicious and easy. It makes for a very happy meal:) Make ahead.

Ingredients For happy salad

    romaine lettuce head
  • 1
    red onion, sliced
  • 1 can
    canned mandarin oranges
  • 1 sm
    package slivered almonds
  • DRESSING
  • 2/3 c
    vegetable oil
  • 1/2 c
    sugar
  • 1/4 c
    vinegar
  • 1 Tbsp
    dijon mustard
  • 1 Tbsp
    poppy seeds

How To Make happy salad

  • 1
    Shred or cut the lettuce, add onion slices, mandarin oranges and almonds
  • 2
    Mix the dressing ingredients together. Chill. and pour over the vegetables. Serve and enjoy
