    fresh pineapple slices, cored
  • 4 c
    chopped romaine lettuce
  • 1 lg
    cucumber, peeled and diced
  • 2 c
    cubed ham chunks
  • 1/2
    red onion, sliced
  • 2 c
    cherry tomatoes, halved
  • 1 lg
    avocado, sliced
  • 1/4 c
    coconut flakes
  • 1/4 c
    candied ginger
  • PINEAPPLE LEMON VINAIGRETTE
  • 1/2 c
    pineapple juice
  • 1/4 c
    lemon juice
  • 1/2 c
    olive oil
  • salt and pepper, to taste

How To Make grilled pineapple salad with pineapple vinaigrette

    To prepare the salad, heat the grill and grill the pineapple slices until they are soft and grill marked. Set aside.

    To make the vinaigrette, smash the pineapple slices through a fine mesh strainer to get the juice from the remaining pineapple. Add the lemon juice and olive oil and mix well season to taste with salt and pepper.

    Arrange on the plate the lettuce, cucumbers, ham, pineapple slices, red onion, tomatoes, avocado slices, coconut flakes and candied ginger. Top with the vinaigrette.
