6fresh pineapple slices, cored

4 cchopped romaine lettuce

1 lgcucumber, peeled and diced

2 ccubed ham chunks

1/2red onion, sliced

2 ccherry tomatoes, halved

1 lgavocado, sliced

1/4 ccoconut flakes

1/4 ccandied ginger
- PINEAPPLE LEMON VINAIGRETTE

1/2 cpineapple juice
-
1/4 clemon juice
-
1/2 colive oil

salt and pepper, to taste
How To Make grilled pineapple salad with pineapple vinaigrette

1To prepare the salad, heat the grill and grill the pineapple slices until they are soft and grill marked. Set aside.

2To make the vinaigrette, smash the pineapple slices through a fine mesh strainer to get the juice from the remaining pineapple. Add the lemon juice and olive oil and mix well season to taste with salt and pepper.

3Arrange on the plate the lettuce, cucumbers, ham, pineapple slices, red onion, tomatoes, avocado slices, coconut flakes and candied ginger. Top with the vinaigrette.
