Ingredients For grilled caesar salad

  • 2 md
    heads romaine lettuce, washed and cut in half
  • 1 Tbsp
    olive oil
  • 2 tsp
    chili powder
  • 1 tsp
    garlic powder
  • 15 oz
    black beans, drained
  • 1/2 c
    corn
  • 1 md
    red pepper, charred, diced
  • 2 Tbsp
    roasted pumpkin or sunflower seeds
  • 1/2 c
    cojita or feta cheese
  • DRESSING
  • 1 md
    avocado
  • 1/2 c
    plain, fat-free greek yogurt
  • 1 md
    lime, juiced
  • 1 md
    clove garlic
  • 2 Tbsp
    cilantro, chopped
  • 4 oz
    can green chilis
  • salt and pepper to taste

How To Make grilled caesar salad

    Pre heat cast iron grill, or gas grill In a small bowl, mix oil, chili powder, and garlic powder. Lightly brush both sides of romaine lettuce. Place lettuce cut side down on the grill for one to two minutes each side until grill marks are present. Remove from grill and set aside.

    In a bowl, combine black beans, corn, red bell pepper, and remaining chili oil used previously on lettuce. Season with salt and pepper.

    Blend dressing ingredients together until smooth and creamy. To assemble salad, place grilled romaine lettuce on a plate, spoon over vegetables, drizzle with dressing, and top with seeds and crumbled cheese.
