I first had a version of this salad at my friend's house in 1967. Her mom had gotten the recipe from a restaurant that was famous for it. This version includes artichoke hearts.

Ingredients For green goddess salad

  • 6 c
    lettuce, torn
  • 4-6
    artichoke hearts
  • 1/2 c
    ripe olives
  • 2 oz
    anchovy fillets (optional)
  • 1 c
    grape tomatoes
  • DRESSING
  • 1 1/2 c
    light mayonnaise
  • 1/4 c
    chives
  • 2 Tbsp
    tarragon vinegar
  • 2 Tbsp
    parsley
  • 1 Tbsp
    tarragon leaves, crushed (if not using tarragon vinegar)
  • 4
    anchovy fillets, chopped
  • 1
    green onion

How To Make green goddess salad

  • 1
    Combine all salad ingredients in large bowl.

    Mix together dressing ingredients. Pour on salad, serve!
