My family loves Mexican food and this salad is a meal in itself. I serve it for dinner or at a party and there is never a bean left on the plate. My son took it to school for a senior class party and they almost ate the bowl. I felt bad because there was another similar dish and it was barely touched. This salad will be a party in your mouth. Not only is it beautiful, but the different textures and flavors in this salad will make you a believer.

Ingredients For ensalada familiar de fiesta (family fiesta salad)

  • 1
    head of iceburg lettuce (cut or torn into bite size pieces)
  • 1 can
    bush's grillin' beans black bean fiesta
  • 8 oz
    cream cheese, room temperature
  • 1 can
    rotel tomatoes (spicy or mild)
  • 3
    roma tomatoes (chopped)
  • 3
    scallions (chopped)
  • 3
    haas avacados (chopped)
  • 1
    small lemon
  • 12 oz
    shredded cheddar cheese
  • 1/4 c
    chopped cilantro
  • 1/2 c
    red onion (chopped)
  • 8 oz
    black olives (sliced)
  • 1/2 c
    sour cream
  • 1
    bag of crispy tortillia chips

How To Make ensalada familiar de fiesta (family fiesta salad)

    Wash and chop lettuce into bite size pieces. Place in bottom of deep bowl. I love clear bowls because it looks so beautiful.

    Pour beans over the lettuce. Mix cream cheese and Rotel tomatoes together and pour over beans and lettuce.

    Cut avacados and squeeze the juice of the lemon on them to keep from turning brown and layer on top of your salad.

    Continue to layer ingredients making sure that some of each shows through on the top of the salad for a beautiful appearance. Finish with dollops of sour cream and sprinkles of cilantro and scallions. Salt and pepper to taste.

    Serve with crispy tortilla chips. You may put some on top around the edge to make a beautiful presentation.
