1 1/2 cfrozen shelled edamame

1 mdcarrot shredded

1/2 ccherry tomatoes cut in half

1 smcucumber seeded and choppped

1/2 cred onion sliced

4 ozherbed goat cheese crumbled
- CITRUS HONEY SOY VINAIGRETTE

3 Tbspfresh squeezed orange juice

2 Tbspeach fresh lemon juice, honey, soy sauce, and olive oil

How To Make edamane garden salad with herbed goat cheese

1Bring a pot of salted water to a boil. Add the edamame and cook 3 to 5 minutes. Drain and rinse under cold water.

2Place the greens in a large salad bowl. Add the edamame, carrots, tomatoes, cucumber, and red onion. Toss well. Top with crumbled herbed goat cheese.

3For the vinaigrette. Whisk all ingredients together and pour over salad.
