chopped salmon salad
One of my favorite restaurants has a salad like this, so I had to try to duplicate it. Here it is! It's pretty darn close. Salmon, arugula lettuce, corn, couscous, dried cranberries, asparagus, tomatoes and pine nuts combine so eloquently together with a plethora of flavor in your mouth with every bite.

Ingredients For chopped salmon salad

1 csushi grade salmon, or lox, chopped

2 carugula lettuce, chopped

1/2 ccorn
-
1 csautéed asparagus, chopped

1/2 cdried cranberries

1/4 cpine nuts
-
1/2 cisraeli couscous, cooked

1/2 croma tomatoes, chopped

1/4 cpoppyseed dressing
How To Make chopped salmon salad

1Cook Israeli couscous, and saute the asparagus. Set both aside to cool.

2Chop asparagus, and transfer to large bowl.

3Combine the rest of the ingredients in the bowl, toss to combine, and serve. Enjoy!
