Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by Wanda Schomp.

Ingredients For caesar salad

1romaine lettuce head

1/2 tspsalt

1/4 tsppepper

1 clovegarlic
-
1/2 tspprepared mustard

2 Tbspworcestershire sauce

1/2 tspanchovy paste (optional)

1/2lemon
-
4 Tbspolive oil
-
1egg
-
parmesan cheese
-
croutons
How To Make caesar salad

1Wash lettuce and remove hard center stems. Place in clean towel and refrigerate until ready to serve.

2Combine salt, pepper and garlic with fork in a wooden salad bowl.

3Add mustard, Worcestershire sauce and anchovy paste; mix.

4Add juice of 1/2 lemon, olive oil and egg; mix well.

5Add lettuce and toss. To serve, place salad on plate; top with Parmesan cheese and croutons.
