This is the easiest dressing ever. My family loves it. Be sure to use Croutons and Reggiano Parmigiano Cheese for better flavor

Ingredients For caesar dressing

    egg yolks
  • 2 Tbsp
    dijon mustard
  • 1
    large anchovies
  • 1 Tbsp
    minced garlic
  • 1 tsp
    worcestershire sauce
  • 1 Tbsp
    red wine vinegar
  • 3/4 c
    sunflower oil
  • 1/4 Tbsp
    lemon juice
  • 1/4 tsp
    salt
  • 1/4 tsp
    freshly ground black pepper
  • 1 1/2 c
    croutons
  • 1/2 c
    freshly ground parmigiano-reggiano cheese

How To Make caesar dressing

    In a food processor, combine egg yolks,mustard, anchovies and garlic. Blend until smooth. With the machine running, slowly add the oil. Add the lemon juice, Worcestershire sauce and vinegar, salt and pepper. Pour over romaine chopped lettuce and add croutons. Toss well. Add grated cheese and enjoy. This makes enough dressing for 4 stalks of Romaine lettuce, cut in approximately 1 inch square pieces. The croutons absorb much of the dressing and the cheese does as well.
