Ingredients For brussels sprouts salad with garlic lemon dressing

  • SALAD
  • 1 lb
    fresh Brussels sprouts
  • 2 c
    leafy lettuce
  • 1 md
    tomato, chopped
  • 2 Tbsp
    fresh parsley, chopped
  • 2 Tbsp
    shelled pistachio nuts
  • 1/4 c
    freshly shaved Parmesan cheese
  • DRESSING
  • 2 Tbsp
    olive oil
  • 1 clove
    garlic, minced
  • 2 tsp
    fresh lemon juice
  • salt and pepper, to taste

How To Make brussels sprouts salad with garlic lemon dressing

    To make the salad, place the Brussels sprouts in boiling water and boil for 10 minutes. Meanwhile, mix the dressing ingredients together in a glass jar and place in the fridge until salad is ready.

    Drain the Brussels sprouts and cut in half. Dry on paper towels and let cool. Place the lettuce on the plates and top with Brussels sprouts, tomatoes, parsley, pistachios and shaved Parmesan.

    Drizzle with the dressing.
