I always start out with a guacamole salad when I go out for mexican, its my favorite. I decided to make my own semi-homemade version for a nice light lunch.

Ingredients For avacado salad stuffed tomato cups

2large tomatoes

2ripe avacados
-
1 cshredded lettuce

1.2 ozpackage guacamole mix

1lime
How To Make avacado salad stuffed tomato cups

1Hollow out two tomatoes.
Cut and remove pit from avacados, scoop out inside into bowl. -
2Mash avacados with packet of guacamole mix, squeeze juice of half lime, mix. Best if refrigerate for 30min.

3Layer each tomato cup with shredded lettuce, s&p on lettuce then guacamole, sprinkle few chopped tomatoes. Serve with dollop of sour cream and lime wedge and cilantro.
