This is one of my mom's recipes and it's become my go-to recipe for summer cook-outs. You can substitute the slaw for lettuce if you'd rather have a salad. If you don't include the chicken, this recipe is vegan.

Ingredients For asian chicken slaw

1 1/2 bagcole slaw mix

1whole rotisserie chicken

1 bunchgreen onions
-
1 pkg2 oz slivered almonds

1 Tbsppoppy seeds

1 canchow mein noodles
- DRESSING
-
1/4 csugar
-
4 tspsalt
-
1 tspblack pepper
-
1/4 ccider vinegar
-
1 ccanola oil
How To Make asian chicken slaw

1Shred the rotisserie chicken. You can also bake 3-4 chicken breasts and then shred them.

2In a nonstick skillet, toast the slivered almonds until they start to brown.

3Green onions are optional. If you choose to use them, slice them fine.

4Combine the first five ingredients in your serving bowl.

5For the dressing, combine all ingredients.

6Right before serving, add the dressing to the slaw mixture and toss until thoroughly mixed.

7Add a few handfuls of chow mein noodles to cover the top and serve.
