My personal favorite! There's a lot to love about this salad. I like to use a blend of fresh baby spinach and romaine or iceberg lettuce. Then, add some favorites- toasted sugary salted pecans, crisp, tart apple slices, and rotisserie chicken, all topped with an absolutely delicious, light honey balsamic dressing. Use as a side salad without chicken or add chicken for a delicious dinner salad. The balsamic/honey dressing is one of our favorites. Great to use in dipping bowls, served with warm Italian bread. This will make 3-4 side salads (double the dressing) or 2 large dinner salads.

Ingredients For apple pecan spinach salad

  • SUGARED NUTS
  • 3/4 c
    halved walnuts or pecans
  • 1 Tbsp
    canola oil
  • sugar and salt, to taste
  • SALAD DRESSING
  • 1/2 c
    canola oil (not olive oil)
  • 2 Tbsp
    balsamic vinegar
  • 2 tsp
    honey mustard
  • 1 clove
    garlic, pressed
  • 1/4 tsp
    black pepper
  • 1/8 tsp
    salt
  • 2 - 3 tsp
    honey, to taste
  • SALAD
  • baby spinach, romaine, iceberg lettuce, or a combination
  • 2
    hardboiled eggs
  • 1/2 lg
    red or green apple or a mix of both, cored and sliced
  • 1 - 2 c
    warm or cold cooked rotisserie chicken chunks
  • red onion rings, optional

How To Make apple pecan spinach salad

  • Toasted Walnuts

    Preheat oven to 400 degrees F. To make the sugared nuts, toss the walnuts or pecans with the oil. Sprinkle generously with salt and sugar, to taste. (No exact measurements here. Just add until it suits you.) Spread out on a baking pan covered with parchment paper. Bake until just fragrant and golden, about 7 minutes.
  • Honey Balsamic Dressing

    To make the dressing, add all ingredients to a jar with a tight-fitting lid and give it a good shake. (I make this in the morning and let the flavors blend until dinner time.)
  • Rotisserie Chicken

    Add the salad greens to plates. Top with eggs, apple slices, chicken, and onion (if using), and the sugared nuts. Serve dressing on the side.
