The Wenatchee Valley is in the central part of Washington state and is the apple and pear capital of the Northwest. Cook time is chilling time. You could leave the chicken out and add more apple for a vegetarian version. THE COOK TIME IS REFRIGERATION TIME.

1 qtcold water

1 tspfresh lemon juice

2 mdred apples, unpeeled (cored and diced)

2 mdgranny smith apples, unpeeled (cored and diced)

1 mdpear, unpeeled (firm green or red, cored and diced)

3 ccooked chicken, diced
-
1 ccelery, thinly sliced
-
3/4 cwalnuts, coarsely chopped (or pecans)

1/2 cdried cranberries (craisins)

1 cmayonnaise
-
1/2 csour cream
-
2 Tbspfresh lemon juice
-
2 Tbspfresh parsley, finely chopped

lettuce, for serving
How To Make wenatchee salad (like a waldorf)

1Pour the cold water into a medium bowl, and mix in the 1 teaspoon of lemon juice. Add the diced fruit and allow to stand briefly. This keeps the fruit from browning.

2In a large bowl, mix the chicken, celery, walnuts and dried cranberries.

3Drain and add the diced apples, mixing well.

4In a small bowl, whisk together mayonnaise, sour cream, 2 tablespoons lemon juice and parsley.

5Add to the chicken mixture and gently toss to coat.

6Cover bowl with plastic wrap and chill thoroughly before serving.

7To serve place some lettuce leaves on each plate on top with salad.
