Ingredients For watermelon salad with jicama & cotija

  • 1/4 c
    fresh squeezed lime juice
  • 4 c
    watermelon, cubed in 1" pieces or use a melon baller.
  • 1/2 c
    peeled and diced jicama
  • 1/2
    jalapeno chili stem & seeds removed then dice
  • 1/4 c
    fresh cilantro, chopped
  • 1/4 c
    crumbled cotija cheese

How To Make watermelon salad with jicama & cotija

    Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 10 minutes.

    Gently combine all ingredients into a large serving bowl.
