1/4 cfresh squeezed lime juice

4 cwatermelon, cubed in 1" pieces or use a melon baller.

1/2 cpeeled and diced jicama

1/2jalapeno chili stem & seeds removed then dice

1/4 cfresh cilantro, chopped

1/4 ccrumbled cotija cheese

1Soak the chopped red onion in the lime juice while you are prepping the other ingredients, about 10 minutes.

2Gently combine all ingredients into a large serving bowl.
