One day my grand daughter wanted a watermelon from the grocer, so we bought one for her. After cutting it all up, I wanted to eat a watermelon salad or somethin'. . . here is what I came up with . . . I added a few fruits in it and it was the "BOMB"! It was so good that I went for seconds and then ate the rest for dessert!!!

Ingredients For watermelon & baby spinach w/balsamic vinaigrette

1 pkgfresh baby spinach

1japanese cucumber, thinly sliced

1 Tbspfresh mint, julienned

4 cwatermelon, diced

1 cfresh strawberries, sliced

1 cfresh red seedless grapes

1 cfresh green seedless grapes

1 ccherry tomatoes
-
1 smred onion, thinly sliced

1/4 cbalsamic vinaigrette

6 ozfeta cheese
-
1lime, freshly squeezed
- BALSAMIC VINAIGRETTE

1/4 cbalsamic vinegar

2 tspdark brown sugar
-
1 Tbspfinely chopped garlic
-
1/2 tspsalt
-
1/2 tsppepper
-
3/4 colive oil
How To Make watermelon & baby spinach w/balsamic vinaigrette

1In a large salad bowl, combine all the ingredients and lightly toss salad. Serve chilled. Add more balsamic vinaigrette as needed.

2BALSAMIC VINAIGRETTE:

3In a small mixing bowl, combine all ingredients and whisk briskly until blended. Refrigerate the remaining balsamic vinaigrette.
