SPRING'S coming just around the corner.Time to think good healthy salads. Here's one that a Co worker brought in to our pot luck lunch. Enjoy! We did.

Ingredients For tortellini fruit salad

  • 24 oz
    cooked tortellini ( your choice )
  • 3/4 c
    orange juice
  • 3/4 c
    maple syrup
  • 2 Tbsp
    ground cinnamon
  • pinch
    of salt
  • 1 pt
    strawberries sliced
  • 1/2
    of a cantaloupe ( cubed )
  • 1 c
    fresh green seedless grapes some cut in half some whole
  • 1 c
    fresh red seedless grapes some cut in half and some whole
  • 1 pt
    blueberries, fresh
  • 1/2 c
    raisins or craisans ( your choice )
  • 1/2 c
    candied walnuts ( optional )

How To Make tortellini fruit salad

    Cook pasta as directed. Rinse with cold water ~ drain well.

    Toss with 2 teaspoons oil.

    Set aside.

    Add fruit and ( CANDIED WALNUTS ** if you choose to use to your salad )...

    mix orange juice,maple syrup,cinnamon,salt in a shaker. ~~Shake Well~~

    Refrigerate all till ready to serve.

    Add dressing.

    CANDIED WALNUTS In non stick skillet on medium heat. Add 1/2 cup Walnuts and 1 tablespoon sugar. Stir constantly. Remove when Walnuts are covered in sugar and sugar is well melted.
