SPRING'S coming just around the corner.Time to think good healthy salads. Here's one that a Co worker brought in to our pot luck lunch. Enjoy! We did.

Ingredients For tortellini fruit salad

24 ozcooked tortellini ( your choice )

3/4 corange juice
-
3/4 cmaple syrup
-
2 Tbspground cinnamon
-
pinchof salt
-
1 ptstrawberries sliced
-
1/2of a cantaloupe ( cubed )
-
1 cfresh green seedless grapes some cut in half some whole

1 cfresh red seedless grapes some cut in half and some whole

1 ptblueberries, fresh
-
1/2 craisins or craisans ( your choice )

1/2 ccandied walnuts ( optional )
How To Make tortellini fruit salad

1Cook pasta as directed. Rinse with cold water ~ drain well.

2Toss with 2 teaspoons oil.

3Set aside.

4Add fruit and ( CANDIED WALNUTS ** if you choose to use to your salad )...

5mix orange juice,maple syrup,cinnamon,salt in a shaker. ~~Shake Well~~

6Refrigerate all till ready to serve.

7Add dressing.

8CANDIED WALNUTS In non stick skillet on medium heat. Add 1/2 cup Walnuts and 1 tablespoon sugar. Stir constantly. Remove when Walnuts are covered in sugar and sugar is well melted.
