Ingredients For tomato watermelon salad with feta

8 c1 1/4 chunks watermelon (about 6 pounds)

6 cripe tomatoes, cored and cut into 1 1/4 chunks (about 3 pounds)

1 tspkosher salt

3 Tbspchopped assorted fresh herbs (dill, basil, mint, etc)

5 Tbspextra virgin olive oil
-
2 Tbspbalsamic vinegar
-
6 cmixed greens
-
1 ccrumbled feta cheese (about 5 ounces)
How To Make tomato watermelon salad with feta

1Combine melon and tomatoes in a large bowl

2Sprinkle with kosher salt and toss to blend. Let stand 15 minutes

3Add 4 tablespoons oil, vinegart and herbs to melon mixture. Season to taste with pepper and more salt if needed

4Toss mixed greens with remaining 1 tablespoon oil

5Mix mixed greens and melon mixture and sprinkle with feta cheese
