    fresh parsley, chopped
  • 1 Tbsp
    fresh mint, chopped
  • 1 clove
    garlic
  • 3 Tbsp
    fresh lemon juice
  • 2 Tbsp
    water
  • 1/4 tsp
    freshly ground black pepper
  • 4 oz
    low-fat feta cheese, crumbled
  • 4 lg
    ripe tomatoes, thickly sliced (about 1 1/2 pounds)

How To Make tomato salad (tomata salata)

    Place the parsley, mint, garlic, lemon juice, water, pepper, and feta in a blender or food processor, and blend into a well-combined sauce.
