Ingredients For sweet pepper, onion and tomato salad

  • 1/2 c
    cider vinegar
  • 1 clove
    garlic, sliced
  • 1 tsp
    sugar
  • 1/4 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1 Tbsp
    ketchup
  • 1 tsp
    worcestershire sauce
  • 2 tsp
    fresh lime juice
  • 1 Tbsp
    extra virgin olive oil
  • 3 Tbsp
    chopped cilantro
  • 1 lg
    bell pepper, any color, cut into thin rings
  • 1 lg
    onion, sliced into thin rings
  • 2 lg
    tomatoes, peeled, cut into 8 wedges

How To Make sweet pepper, onion and tomato salad

    Combine all ingredients except pepper, onion, and tomato and mix well.

    Pour dressing over vegetables and stir. Cover and refrigerate for several hours or overnight, stirring occasionally.
