sunshine carrot salad
This is an all-raw salad, that is rich in nutrients and extremely healthy for you. This recipe comes from a recipe book of mine called "Recipes for Life page 154" it is vegetarian and uses mostly all "live" or "living" ingredients -- as they would say. This is my most favorite of the salads. My husband & I took an all weekend intensive courses with "Hallelujah Acres" learning how to eat with raw foods because I had become extremely ill after one of my mission trips. We changed our diets for over a year to eating extremely healthy and mostly raw with a little chicken here and there. I need to incorporate a little more raw foods back into our diet, so I thought I would share this recipe with you all. I will try and post a few more from the recipe book. I do hope you enjoy this salad.
Ingredients For sunshine carrot salad
- SALAD

3 ccarrot

1/2 corganic raisins

1 mdapple, red delicious

1 mdstalk of celery
- DRESSING
-
1 mdapple, red delicious

2 cgrated carrot

1/2 calmonds
-
fresh apple juice or distilled water
How To Make sunshine carrot salad

1For Salad: Peel and grate apple and carrots, and finely chopped celery. Combine all ingredients above in a bowl and toss. Mix in the following dressing:

2For dressing: In a blender, chop 1/2 cup of almonds, add 1 Red Delicious apple, peeled and cored and 2 cups of grated carrot; blend until creamy. Add a small amount of distilled water or fresh apple juice to reach consistency desired.

3Here is the consistancy of my dressing. If you have a better blender or food processor you will be able to make it thinner.

4Mix salad and dressing together and they are ready to be served.
