Ingredients For summer fruit ambrosia

    honeydew, peeled, seeded, cut into 1" cubes
  • 4
    nectarines, halved, pitted, sliced thin
  • 6
    plums, halved, pitted, sliced thin
  • 1 pt
    blueberries
  • juice of 3 limes
  • 1/4 c
    honey
  • 1 c
    coconut, unsweetened
  • 2 Tbsp
    sugar
  • 2 Tbsp
    crystallized ginger, finely minced
  • 2 tsp
    lime zest, minced

How To Make summer fruit ambrosia

    Add melon, blueberries, plums, and nectarines into large glass bowl.

    Whisk together lime juice and honey in a small bowl. Gently toss into fruit, cover and refrigerate, at least 2 hours.

    Meanwhile, preheat oven 300. Spread coconut out on baking sheet, toast until golden brown, 5-10 minutes.

    While the coconut is still warm, toss with sugar. Allow to cool slightly, then toss in ginger and lime zest.

    When ready to serve, sprinkle the coconut topping over the fruit.
