Ingredients For summer fruit ambrosia

1 lghoneydew, peeled, seeded, cut into 1" cubes

4nectarines, halved, pitted, sliced thin

6plums, halved, pitted, sliced thin

1 ptblueberries

juice of 3 limes

1/4 choney
-
1 ccoconut, unsweetened

2 Tbspsugar

2 Tbspcrystallized ginger, finely minced

2 tsplime zest, minced
How To Make summer fruit ambrosia

1Add melon, blueberries, plums, and nectarines into large glass bowl.

2Whisk together lime juice and honey in a small bowl. Gently toss into fruit, cover and refrigerate, at least 2 hours.

3Meanwhile, preheat oven 300. Spread coconut out on baking sheet, toast until golden brown, 5-10 minutes.

4While the coconut is still warm, toss with sugar. Allow to cool slightly, then toss in ginger and lime zest.

5When ready to serve, sprinkle the coconut topping over the fruit.
