Everybody loves this salad ... unless they don't like strawberries. What's not to like? Plus a serving provides more than 3 grams of fiber, 1.6 mg of iron, and 58 mg of calcium. Ingredients For strawberry spinach salad

  • 10 oz
    spinach, fresh
  • 2 c
    strawberries, sliced
  • 1/2 c
    sliced red onion
  • 1/3 c
    lemon juice, fresh
  • 3 Tbsp
    sugar
  • 1 Tbsp
    canola oil
  • 2 tsp
    grated lemon rind
  • black pepper, freshly ground to taste
  • 12 c
    sliced almonds

How To Make strawberry spinach salad

  • 1
    Add sliced strawberries to spinach in a medium bowl. Cut thinly sliced onion into bite-size pieces, and add to strawberries and spinach. Place cover on bowl and refrigerate.

    First grate or zest lemon rind. Then juice lemons to make 1/3 cup. Add sugar and oil to lemon zest and juice. Refrigerate. Just before eating add almonds and lemon vinaigrette to spinach salad, and toss. Serve immediately.

    Leftovers can be taken for lunch the next day if you add dressing only to portion you are eating. Otherwise, the strawberries break down.
