Ingredients For strawberry spinach salad

10 ozspinach, fresh

2 cstrawberries, sliced

1/2 csliced red onion

1/3 clemon juice, fresh

3 Tbspsugar

1 Tbspcanola oil

2 tspgrated lemon rind

black pepper, freshly ground to taste

12 csliced almonds
How To Make strawberry spinach salad

1Add sliced strawberries to spinach in a medium bowl. Cut thinly sliced onion into bite-size pieces, and add to strawberries and spinach. Place cover on bowl and refrigerate.

2First grate or zest lemon rind. Then juice lemons to make 1/3 cup. Add sugar and oil to lemon zest and juice. Refrigerate. Just before eating add almonds and lemon vinaigrette to spinach salad, and toss. Serve immediately.

3Leftovers can be taken for lunch the next day if you add dressing only to portion you are eating. Otherwise, the strawberries break down.
