This light and refreshing salad is different, in that it is both sweet and tart with delicious garlic, and tomato undertones. Starfruits are sweet and tart and very juicy. They are native home grown all over south Florida. A homemade vinegrette is prepared and poured over everything. Enjoy

Ingredients For starfruit salad, ensalada de carambola

1 lgfresh rinsed green leaf lettuce, torn in pieces

5 lgradishes sliced thin

1 lgwhole ripe tomato sliced in quarters and then the quarters sliced again

1/2 mdsweet onion sliced thin

2 mdlarge ripe starfruits sliced

lemon/lime honey vinegrette

2 clovefresh minced garlic, minced fine

1 lglemon, juiced
-
1 lglime, juiced

2 Tbsphoney
-
1/4 clight olive oil
-
1/2 tspsalt

1/4 tspground black pepper
How To Make starfruit salad, ensalada de carambola

1Rinse, spin dry if possible leaf lettuce, tear in pieces. Add the radishes, onion, tomatos,and starfruit.

2Next in a medium bowl add the juice of the lemon and lime. Add to this the honey, minced garlic, salt and pepper. With a wire wisk, wisk real well then add the olive oil in a light stream wisking until well incorporated into the lemon/lime juice.

3Pour the vinegrette over the salad toss well and serve. Check for salt and pepper seasoning. Enjoy.
