This light and refreshing salad is different, in that it is both sweet and tart with delicious garlic, and tomato undertones. Starfruits are sweet and tart and very juicy. They are native home grown all over south Florida. A homemade vinegrette is prepared and poured over everything. Enjoy

Ingredients For starfruit salad, ensalada de carambola

  • 1 lg
    fresh rinsed green leaf lettuce, torn in pieces
  • 5 lg
    radishes sliced thin
  • 1 lg
    whole ripe tomato sliced in quarters and then the quarters sliced again
  • 1/2 md
    sweet onion sliced thin
  • 2 md
    large ripe starfruits sliced
  • lemon/lime honey vinegrette
  • 2 clove
    fresh minced garlic, minced fine
  • 1 lg
    lemon, juiced
  • 1 lg
    lime, juiced
  • 2 Tbsp
    honey
  • 1/4 c
    light olive oil
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground black pepper

How To Make starfruit salad, ensalada de carambola

    Rinse, spin dry if possible leaf lettuce, tear in pieces. Add the radishes, onion, tomatos,and starfruit.

    Next in a medium bowl add the juice of the lemon and lime. Add to this the honey, minced garlic, salt and pepper. With a wire wisk, wisk real well then add the olive oil in a light stream wisking until well incorporated into the lemon/lime juice.

    Pour the vinegrette over the salad toss well and serve. Check for salt and pepper seasoning. Enjoy.
