Ingredients For squash-pomegrante salad

2 lbbutternut squash, seeded and cubed.

2 Tbspolive oil

8 corganic salad greens
-
1/4 cpine nuts
-
1/4 cpomegranate seeds

1/4 csliced red onion
-
1/2 cwish bone light raspberry-walnut vinaigrette

1 Tbspdijon mustard
How To Make squash-pomegrante salad

1Heat oven to 400. On lg baking sheet, toss squash cubes and oil. Season w/ salt and pepper to taste. Roast 20 min, or until tender, stirring once. Let cool. transfer to lg bowl.

2Add next 4 ingredients to bowl, toss to combine.

3In another bowl, blend vinaigrette and mustard drizzle over salad.
